A pretty breakfast: Oven pancake with kiwi & Pomegranate, and ginger tea

Recipes:

OVEN PANCAKE:

• 6 eggs
• 3/4 cup flour (can be gluten free, coconut flour or oat bran instead)
• 3/4 cup milk
• A pinch of salt
• (optional)1 tsp or more of sugar or agave (to taste)

Directions:

Preheat oven to 375 degrees. Put cast iron pan into oven to heat.
Lightly beat eggs, and mix the rest of the ingredients in a bowl. Take heated pan out of the oven, grease with butter, ghee or coconut oil. Pour the ingredients into the greased pan, sprinkle fruit all over, and bake for 15-20 minutes. Center should be firm. Let cool, cut into pieces and enjoy!

GINGER TEA:

•Ginger root
•Water
•Honey (when serving)
•Lemon (when serving)

Directions:
Fill a pot with water and sliced ginger root. Let it reach boiling then turn it down to med/low heat and let it simmer for 30-60 minutes (longer will just make the tea stronger-sometimes I cook tea on low all day and keep adding water).
When you serve it, strain the ginger, add honey and lemon.
